What better way to warm up during the winter months than a huge bowl of soup! January is National Soup Month. Check out this recipe from Executive Chef Anthony Cuocco from Atlantic Shores Retirement Community.

Loaded Potato Soup
6 Servings

Ingredients:

  • 4 Large Potatoes, Peeled and Cubed
  • ½ tsp salt
  • 8oz bacon, crumbled
  • 4 tbsp butter
  • ½ medium onion, chopped
  • 2 garlic cloves, minced
  • ¼ cup all purpose flour
  • 2 ½ cups whole milk
  • 2 ½ cups chicken broth
  • 1 cup mild cheddar cheese, shredded
  • ¾ cup sour cream
  • 1 tsp or to taste
  • ¼ tsp pepper, or to taste
  • Green onions-garnish

Method of Preparation:

Place sliced potatoes in a large pot or stockpot and cover with water. Season with salt and cook until potatoes pierce with a fork (8-10 minutes). Drain Potatoes

While potatoes are cooking, sauté bacon in a pot until crispy and transfer to a plate, reserve bacon grease in the pot

Add butter and chopped onions-Sautee until tender. Add garlic and cook until fragrant (roughly 1 minute)

Quickly whisk in flour and slowly add in milk and chicken broth, whisking until a soft boil.

Add drained potatoes and season soup with salt and pepper to taste

Stir in sour cream, shredded cheddar, and half of your crumbled bacon. Bring to a boil and remove from heat.

Top individual servings with remaining bacon and green onions as a garnish
